Moroccan Lamb
Ingredients
- 4 T minced shallots
- 1/2 t cinnamon
- 2 t ground coriander
- 1/2 t cayenne pepper
- 1 t ground cumin
- 1 t turmeric
- Salt and pepper
- 1 lb leg of lamb cut into stew meat
- 4 zucchini
- Fresh mint (for garnish)
Directions
- Preheat oven to 350
- brown the lamb and shallots in the spices, chop the zucchini
- Combine all ingredients in pyrex baking dish
- Bake for 20 minutes
- Add mint to taste before serving
NOTES: Serve wtih Rice Pilaf and Yogurt Sauce
