Hungarian Nut Cookies
Ingredients
- 2 cups hazelnuts or walnuts
- 2 large egg whites
- 1 packed cup brown sugar
Directions
- Preheat oven to 350
- In food processor, pulse nuts until coarsely chopped
- Place egg whites in a bowl with a pinch of salt
- Beat egg whites until they just begin to stiffen
- Add rbown sugar and beat until stiff peaks form (mixture should be very thick and glossy -- almost taffylike)
- Carefully fold in chopped nuts with a flexible rubber spatula
- Line a baking sheet with parchament paper or sil-pat
- Drop heaping tablespoons of batter onto baking sheet
- Bake for 22 minutes or until dark beige and firm
